Yes you can delete the theme and reinstall the new one (back everything up first).

Genesis child themes don’t have automatic updates, but the Genesis Framework does. The reason child themes don’t update automatically is because most people make edits/customizations to their themes and an automatic update would overwrite their work. So its best to manually update if you’ve made changes to any of your files.
