Greetings,
I’ve search all of my options in the admin console but have not been able to figure out how to create dropdown menus and nested menus like in the demo.
Was a plugin used that is not included in the theme?

No this is the default WordPress menu. You would need to drag a menu over to the right a little (indent) and it will automatically start a submenu. You can take a look here at a WP tutorial – http://en.support.wordpress.com/menus/#changing-the-order-of-menu-items-and-creating-sub-menus
