I like the way you have pagination on the demo portfolio page with a page 1, 2, next. http://demo.appfinite.com/epik/portfolio/

Default has pagination with older and newer posts. here is the URL http://www.resultgetters.com/blog/

How do I change the default to work like the demo?

This can be found in your Genesis Theme Settings page under “Content Archives”
